Babalicious Food Extravaganza

From 25 November to 4 December 2011, Foodfare presents an authentic spread of Peranakan buffet lovingly prepared by renowned Peranakan Chef Philip Chia and their Executive Chef from Vanda Terrace.

Peranakan cuisine, a brilliant fusion of Chinese and Malay cooking, involves hours of complicated preparation and history to boot; its cuisine is passed on generations after generations, and Chef Philip has picked up invaluable cooking tips that will promise an authentic and traditional affair.

The signature Peranakan dish, Ayam Buah Keluak (Chicken in Black Nut Stew), a stewed flavourful combination of tender chicken and Buah Keluak (an Indonesian black nut) will induce salivation. Another dish you cannot miss is the Bakwan Kepiting (Crab Meatball Soup); it is a costly festive dish that is usually served during Chinese New Year reunion dinners, birthdays and weddings. Now you can get a taste of it without the ocassion!

Other tempting Peranakan dishes include Nyonya Egg & Prawn Salad, Udang Goreng Chilli Garam (Fried Chilli Prawn), Nyonya Chap Chye (Nyonya Mixed Vegetables) and Babi Pontay (Braised Pork with Salted Bean Paste).


Nyonya Kueh are a staple in Peranakan desserts; an assortment is available at the buffet spread.

The Durian Pengat will satisfy those with a sweet tooth; you will find sweet potato cubes and sago in this durian dessert. Other tempting desserts to look out for are the Chendol, Pulot Hitam and Bubor Cha-Cha.

Aside from scrumptious food, you can immerse in a host of Peranakan activies such as intricate bead work demonstrations at 7.30pm on Monday to Thursday (28 Nov to 1 Dec 2011), live cooking demonstrations by Chef Philip at 7.330pm on Tuesday (29 Nov 2011) and Thursday (1 Dec 2011) and bazaar stalls selling Nyonya cookies, accessories, cookbooks and traditional costumes.
