In May, I made a promise to return to Absinthe – a promise I wanted to keep, and kept it I did :-
6 Huitres de Saison, Citron, Pain de Campagne, Vinaigrette au Mirin 6 Freshly Shucked Oysters with Lemon, Rye Bread and Mirin Dressing S$28
This was split into 2 portions of 3 oysters each. I am no oyster connoisseur but at the very least, I am able to tell when an oyster is fresh – and the ones served to us here at Absinthe, were indeed fresh.
Pork Stew topped with Puff Pastry
Decadent, creamy pork stew with generous portions at that.
Grilled Beed Tenderloin with Mashed Potatoes with a Red Wine reduction – Medium Rare
The tenderloin was executed perfectly – resulting in the beef being served to the done-ness as ordered.
